We’ll be certainly glad to welcome you to Brasserie & Bar ÉMILE.
Émile Rouger was born in Paris in 1885. The son of upper-class parents, he grew up not far from the Bohemian quarter of Montmartre, which had a profound impact on his development.
Much to the displeasure of his father, a tile factoryowner, he soon drifted towards the bohemian way of life, frequenting the cafes and bars in his surroundings.
Later, he travelled extensively throughout Europe, opting to stay in the finest hotels of the time. Thanks to his sophisticated appearance, he was generally thought of as a dandy, in the best possible sense.
His travelling came to a halt when Émile Rouger arrived in Vienna and instantly felt in love with the city. He stayed and quickly became a local celebrity once again. His unique savoir-vivre was a welcome addition to the Viennese society.
He was a regular guest at the famous Ringstrasse cafes, spending his mornings reading French newspapers in the lobbies of the hotels. Not surprisingly, he was considered an elegant gentleman in the dance hall Sans Souci in the Bräunerstrasse by the 1920s.
Although he left Vienna in the early 1930s, something about his character remains to this day. An ease. The joy of a beautiful life of style and enjoyment. When searching for a suitable name for a brasserie in Vienna, we were reminded and inspired by his story.
Erich Freund has been the Executive Chef at the Hilton Vienna Plaza since April 2014. Born and bred in Vienna, he began his culinary career with a traditional apprenticeship at the Hilton Vienna. After having worked in various restaurants, such as the “Schwarze Kameel” and “Guess Club” as well as other Ringstrasse hotels in Vienna, he moved to Hamburg and Munich.
After his most recent positions as a Food and Beverage Manager, he is returning now as an Executive Chef to the Hilton Vienna Plaza, where he once formed a very successful duo with Werner Matt. At the Brasserie & Bar ÉMILE he is now offering French-Austrian delights such as Bouillabaisse and Crêpe Suzette.

Being a true “carving artist”, all Plaza host are specially trained in creating memorable moments, e.g. if you order the salmon trout in the sea salt crust. Personal and individual service is very important for us and therefore one of our credos. We are very much looking forward to welcome you soon at Brasserie & Bar ÉMILE.
